Alaskan Fresh Cod with Chickpeas
¼ cup extra virgin olive oil
1 small white onion sliced thick
¼ lb mushrooms coarsely sliced
3 clove garlic, thinly sliced
1 15 or 16-ounce chickpeas drained
4 tbsp flat leaf parsley
4 tbsp chopped thyme
4 6-ounce filets of cod
In a large skillet add 5 tablespoons of the oil. Add the onion, mushrooms, garlic
all the herbs and the chickpeas. Season with salt and pepper,
stir in the parsley and thyme and keep warm.
In a large skillet heat the remaining oil until almost
smoking. Season the cod fillets with salt and pepper, add to the skillet and cook
until well browned. Carefully flip the fillets over and cook throughout.
Spoon the vegetables herbs and chick peas in a plate and top with the seared fillets.
