Spaghetti alla Carbonara

(4 people recipe)

 

12oz of linguine

5 oz of guanciale * (if not bacon)

3.5 oz of pecorino (is the sheep milk version of parmesan cheese which is made with cow's milk)

4 egg yolks + 1 whole egg

pinch of black pepper

 

Boiled the pasta, and strained from cooking water. In the mean time, chop the guanciale (or bacon) and sauteed in a skillet (no oil or butter is necessary). Separate the egg yolks and add the whole egg and mix in the pecorino cheese and black pepper and whisk everything together. Once the pasta is cooked, toss it with eggs and cheese together and serve immediately.        

 
*is most often an unsmoked Italian bacon prepared with pig's jowl or cheeks. Its name is derived from guancia, Italian for cheek. Guanciale is similar to the jowl bacon of the United States.

Pork cheek is rubbed with salt, sugar, and spices (typically ground black pepper or red pepper and thyme or fennel and sometimes garlic) and cured for three weeks. Its flavor is stronger than other pork products, such as pancetta, and its texture is more delicate.
