Jim 'N Nick's Creamy Grits (Serves 4)
Water 4 cups
White Stone Ground 1 cup
Butter 2 ounces
Grated Parmesan ¼ cup
Kosher Salt 1 teaspoon
Black Pepper ¼ teaspoon
Hot Sauce ½ teaspoon
Bring water to a boil. Whisk grits into boiling water and turn the heat off. When the grits and the water settle, skim the husks of the grits off the top of the water. Return grits to a simmer over medium heat. Simmer grits gently for an hour until they are completely tender. Whisk the grits frequently to prevent them from sticking to the pot and scorching.
Stir in butter, cheese and seasonings.
Serve grits hot with your favorite pulled pork barbecue and barbecue sauce.
