John's City Diner's Chicken and Waffles

John's City Diner Cheddar Waffle

1.5 Cups All Purpose Flour
.5 Cup Corn Starch
1 tspn Baking Powder
.5 tspn Baking Soda
1 T Sugar
1 tspn Salt
2 Cups Buttermilk
1 Cup Vegetable Oil
2 each  Eggs – Large
1 tspn Vanilla Extract
2 Cups Shredded Cheddar Cheese

Mix all wet ingredients together in a bowl
Mix all dry ingredients together except for cheese in a bowl
Combine wet ingredients into dry ingredients
Fold in Cheese
Cover and let stand in refrigerator 30 minutes prior to use


John's City Diner Brine

2 Quarts Water
1 Cup Kosher Salt
1 Cup Brown Sugar    
2 each Onions – rough chopped
.25 Cup Fresh Garlic Cloves – rough chopped
3 each Bay Leaves
1 T Black Peppercorns
1 tspn Red Pepper Flakes
1 T Thyme – dried
1 T Tarragon – dried
4 lbs Ice

Combine all ingredients in a stock pot except ice
Bring to a boil and simmer for 20 min.
Add ice and stir to dissolve. This will cool down brine to use.
Allow to fully chill before use

John's City Diner's Balsamic Infused Maple Syrup

1 Cup Real Maple Syrup
2 Cups Balsamic Vinegar

Bring vinegar to a simmer over medium heat and allow to reduce by half, leaving 1 cup
Mix 1 cup of reduced balsamic syrup with 1 cup maple syrup
