Irish Soda Cookies from Mary's Cakes & Pastries
Yield: about 30 cookies
1 cup oats
1 1/2 cup a.p. flour
1/2 cup granulated sugar
1/2 tsp. baking soda
6 oz. butter
1/2 cup raisins
1/4 cup buttermilk
1 tsp. caraway seeds
Mix dry ingredients together in food processor and pulse until smooth and oats are broken up.
Add butter and pulse until mixture resembles a coarse meal.
Empty into a large bowl and add raisins, egg and milk. Mix to create a soft dough.
Shape dough into a ball and knead slightly.
Roll out to 1/4 inch thick and cut into circles approximately 2-inches in diameter.
Brush tops with egg wash (beaten egg with a little water added) and sprinkle with coarse sugar.
Bake at 375 10-15 minutes or until slightly browned and crispy.
