Asparagus and cashew stir fry

AATC's Asparagus and Cashew Stir-Fry

1 lb fresh asparagus,cut into 2 inch pieces

Yellow squash,cut into bite-size pieces

1/2 red onion,chopped

1/2 red bell pepper,chopped

1 tbsp fresh garlic,minced

1 tbsp fresh ginger,minced

1/2 cup cashews

2 tbsp olive oil

1 tssp sesame oil

2 tbsp soy sauce


In a large saute pan or wok,heat your olive oil.Add your squash and asparagus.Cook for about a minute,add sesame oil and remaining vegetables.Then add soy sauce,consatntly stir-fry all ingredients.The colors are great and the aroma from this dish is fantastic!!!Enjoy and we will see you soon!
