Haley's Double Crusted Cheesecake

3- 8 ounce Packs of Cream Cheese
1 & 1/2 cups sugar
1-Tablespoon Vanilla Extract
2- 8 ounce cans crescent roll dough
1/4 cup sliced almonds
For the Topping:
1/2 cup melted butter
1/2 cup white sugar
1 teaspoon cinnamon
Preheat oven to 350. Remove Cream Cheese from wrappers and put in a microwave safe bowl. Cook it on the defrost setting until it is melted all the way through and easy to stir with a whisk. Add Sugar and Vanilla and whisk until creamy and smooth. Spray the bottom and the sides of a 9X12 casserole dish. Open one can of crescent rolls, but don't take them apart. Roll out the entire can and lay it on the bottom of the casserole dish. Spread the cream cheese mixture evenly over the dish next. Top the cream cheese evenly with sliced almonds. Open the other can of crescent rolls and lay them over the top of the cream cheese mixture. Drizzle melted butter evenly over the top. In a small bowl mix remaining sugar and the cinnamon. Sprinkle this over the top. Bake for 45 minutes or until golden brown.
Allow cheesecake to cool before serving. You can also make this a day ahead and keep it refrigerated. When you are ready to serve top with Strawberry Coulis and honey. This is the best (and easiest) Cheesecake Recipe I have ever saw! I hope you guys enjoy this recipe!
For The Sauce:
4 cups sliced Strawberries
1 cup water
1 cup sugar
1 teaspoon Vanilla Extract
Bring the entire contents to a boil, and cook on medium heat, stirring frequentky, until a thick syrup forms.
For extra added delicious goodness swirl over the top with Honey!
