Chef Bob's Shrimp Stir-fry and Quinoa

Chef Bob's Shrimp Stir-Fry with Quinoa

2 pounds shrimp (peeled & deveined)

3 Tablespoons olive oil

1 cucumber (diced)

1 onion (diced)

3 cloves garlic (minced)

1 carrot (julienne)

2 cups spinach

3 cups cooked Quinoa

1 Tablespoon fresh dill (chopped)

3 Tablespoons soy sauce

1 lemon (Juiced)

Heat oil in wok, stir-fry cucumber, onion, garlic, and carrot for 1 minute. Add shrimp, then spinach and cook 1 minute, add cooked Quinoa, dill, soy sauce and lemon. Serve hot or cold.
