Chef Bob's Chicken Florentine

2 chicken breast (boneless. skinless)
3 Tablespoons olive oil
1 purple onion (diced)
3 cloves garlic (minced)
5 cups Spinach
1/2 cup basil leaves (fresh)
1/2 cup rice wine
1 cup heavy whipping cream
1/4 cup feta cheese
Flour for dusting chicken
salt and pepper

Season Chicken with salt and pepper. Lightly dust in plain flour. Heat 2 tablespoons of oil in a heavy-bottomed
skillet. Cook chicken breast 2 minutes per side. Remove chicken to a plate to rest. Heat remaining 1 tablespoon of oil
and add onion and garlic. Cook scraping pan with spoon. Add rice wine and continue scraping pan. Add spinach and basil and toss till spinach is wilted. Add chicken to spinach and basil. Add feta cheese.
