Chef Bob's Sweet Potato Fries Noon Cooking - August 14, 2012
2 or 3 sweet potatoes, peeled
1/2 cup corn starch
5 cups oil for frying
1 cup mayonnaise
1 small red onion, finely chopped
2 cloves garlic, minced
1 Tablespoon horse radish
1 Tablespoon lemon juice
2 Tablespoons parsley
Salt & pepper
Slice sweet potatoes very thin. Lightly dust in corn starch.
Heat oil to 350 degrees. Fry for 1-2 minutes. If you do chips, stir them in the oil to keep from sticking.
Drain on paper towels.
To make dip mix remaining ingredients.
