Kairos Fried Pimento Cheese

2 cups pimento cheese (refrigerated overnight)

3 Cups Peanut Oil
2 cups buttermilk
4 cups peanut oil
2 cups Self-Rising Flour
Add buttermilk to a small bowl. Add flour to a small bowl. Scoop out a tablespoon of Pimento Cheese at a time and place on a sheet pan or a plate.
Heat Peanut oil in a large pot until it reaches about 350 degrees. Take Individual Pimento Cheese Spoonfuls and form a ball in your hand. Transfer into the flour and coat all sides evenly. Be careful to use gentle hands or it will smash. Then transfer to the buttermilk and coat evenly. Go back into the flour again, then back into the buttermilk. End with one final turn in the flour.
Carefully drop the pimento cheese into the peanut oil. Fry until golden brown. You may have to flip it over with tongs. Remove from oil and allow it to dry on a plate with paper towels. Serve immediately. Enjoy!
1/2 cup diced pimentos
1/2 cup cream cheese (at room temperature)
1 cup Mayo
1 cup Sour Cream
2 cups Shredded Sharp Cheddar Cheese
1/2 Cup Shaved Parmesan Cheese
2 Tablespoons green onions
2 Tablespoons chopped fresh cilantro
1/2 teaspoon minced garlic
Freshly Cracked White Pepper
In a mixing bowl whip cream cheese until smooth. Add in Mayo, Sour Cream, Garlic, Sea Salt, and White Pepper and whip until incorporated and smooth. Using a spatula or large spoon, fold in Cheddar, Parmesan, and pimentos. Fold in just until it is mixed up well. Don't Over-mix. Fold in Cilantro and green onions. Cover and refrigerate four hours or overnight.
*For a spicy variation add 1/2 cup chopped fresh jalapenos.
