Pan Roasted Peaches with salad and Green Goddess Dressing

Pan-roasted Peaches

3 each Peaches (ripe but still firm)

½ C. Turbinado Sugar

Salt and White Pepper to taste

½ C. Bacon Fat

 

  Cut peaches in half,  lengthwise and remove seed.  Place bacon fat ( Extra Virgin Olive Oil can be substituted) into a cast iron skillet and turn on medium heat.  Oven set at 425 degrees.  Season cut, flat side of peaches with salt and pepper.  Place sugar on a plate and turn peaches flat side down onto plate to coat peaches with sugar.  Gently place peaches into skillet and sear for about 5 minutes or they have started to brown. Flip peaches and place in oven for about 10 minutes, until just cooked. Do not overcook or they will become too soft.  Remove from pan and let cool.  Slice and serve with a salad, pork or chicken. 

 

Green Goddess Dressing

2 each canned Anchovies

½ C. Mayo

½ C. Sour cream

1 oz. Lemon juice

2 T. Scallion (chopped)

½ C. Parsley (chopped)

¼ C. Terragon (chopped)

Salt and White Pepper to taste

 

Place all ingredients into a blender or food processor and puree.  Refridgerate.
