Village Tavern Veggie Burger

1 Each                                    WHEAT BUN, TOASTED

1 Patty                       BEAN BURGER (RECIPE FOLLOWS)

1 Tablespoon                        MAYONNAISE

1 Each                                    LEAF LETTUCE

1 Each                                    TOMATO, SLICED

3 Each                                    RED ONION, SLICED




  1. 1.    Toast both sides of bun evenly, and then place veggie burger on grill to cook. 


  1. 2.    Spread mayo on top half.


  1. 3.    Place leaf lettuce, tomato and red onions on top half of bun. Place veggie burger on bottom half of bun.


  1. 4.    Place both pieces of bun on plate open face.



Makes 5 patties




1 Cup                          Edamame

½ Cup                         Black Beans, drained

½ Cup                         Black-eyed Peas, drained

¼ Cup                         Black Beans, drained

½ Cup                         Brown Rice, cooked

3 Each                                    Egg, beaten

1 Cup                          AP Flour, sifted

¼ Cup                         Yellow Onion, minced

¼ Cup                         Tahini

2 Tablespoon            s          Dijon Mustard

2 Tablespoons          Soy Sauce

2 Tablespoons          Parsley, chopped

1 teaspoon                 Thyme, chopped

1 teaspoon                 Cumin, ground

1/8 teaspoon              Cayenne Pepper

2 teaspoons               Garlic, chopped

1 teaspoon                 Kosher Salt


  1. 1.    Thaw out edamame.
  2. 2.    Drain the first ½ cup of black beans and all the black-eyed peas. Using a robot coupe or food processor, mash the edamame, black beans and black-eyed peas.
  3. 3.    Transfer to a mixing bowl, add the rice, the next ¼  cup drained black beans, eggs, onion, tahini, soy sauce and all the spices. Mix thoroughly with hands (gloved).
  4. 4.    Mix in the flour.
  5. 5.    Pre-heat oven to 300 F.
  6. 6.    To cook the bean burger, heat about 2 Tablespoons of oil in a pan. Place about ½ Cup of the bean mix in the oil. Sear each side for 1 minute each or until golden. Place in a sheet tray lined with parchment paper. Repeat until the all bean mixture is made into patty.
  7. 7.    Place in the oven for 5-7 minutes. Ready to grill and serve.
