Newk's Express Café's Tippah County Caviar
4-5 cans of black-eyed peas rinsed and drained OR 4-5 cups of black-eyed peas soaked overnight.
1 cup of pimentos
1 medium yellow pepper, diced
1 bunch scallions, chopped
4-5 jalapeno peppers, diced, seeds removed
For the dressing:
1 cup canola oil
1 cup red wine vinegar
Pinch of garlic powder
Pinch of salt
Pinch of pepper
1 TBSP of your favorite store-bought hot sauce.
To prepare, in a large bowl, combine the beans and the vegetables. In a separate bowl, mix the ingredients for the dressing and whisk well. Add the dressing to the bean mixture and stir. Serve chilled.
