All Around Town Catering Crab Salad and Sweet and Sour Soup

All Around Town Catering Crab Salad and Sweet and Sour Soup

 

1 lb crab legmeat[Snapper Grabbers has it for about $16.00;don't let the price scare you.It goes a long way]

2 Andouille sausage,sliced small

1/2 yellow onion,sliced

1/4 red bell pepper,diced

3 cups chicken stock

1 Tbsp corn starch mixed with 2 Tbsp water

2 Tbsp rice vinegar

1/2 tsp black pepper

1/4 tsp salt

 

Bring chicken stock to a boil.Add onion,pepper,sausage,and spices.Simmer for a couple of minutes,then add corn starch mixture and vinegar.Add about 1/2 cup of crabmeat.Let simmer for a minute and add a squeeze of lemon juice and garnish with cilantro.This is an excellent soup and can be enjoyed with just about any entrée.Today we are serving it with a crab salad.

 

Killer Dressing

1 cup mayonnaise

1 Tbsp chili sauce

1 Tbsp relish

1 Tbsp chopped celery

1 hard boiled egg,diced

2 servings of salad

 

Combine all ingredients,and dress salad with this dressing.This has a very nice flavor to it and compliments the soup very well.Enjoy!!!
