Kairos Lemon Dream Kobbler

For the filling:

3 eggs

1 cup sugar

3/4 cup unsalted butter

1/2 cup lemon juice

Zest of 1 lemon

1 teaspoon vanilla extract

1/2 cup all purpose flour

For the topping:

1 cup sugar

1 cup buttermilk

1 cup self-rising flour

1 teaspoon powdered sugar
 Preheat oven to 375

For the filling: Use a double boiler or put a metal mixing bowl over a pot of boiling water. Beat three eggs, add sugar and mix until incorporated, then add flour and mix until incorporated. Add in the rest of the ingredients and cook, stirring constantly until it coats the back of a spoon.

Spray a 9X12 casserole dish with cooking spray. Pour Lemon mixture evenly into the bottom.

In a mixing bowl, whisk together the sugar, buttermilk, and flour for the topping. With a spatula pour the mixture evenly over the top of the Lemon Filling.

Bake uncovered @ 375 until golden brown (45 minutes - 1 hour).

Sprinkle with Powdered Sugar. Serve with fresh whipped cream or vanilla ice cream, or it is great all by itself. Enjoy!
