Chef Bob's Warm Arugula Salad

Chef Bob's Warm Arugula Salad

5 oz of Fresh Arugula
1 small Red Onion (Sliced)
1 Red Tomato (diced)
½ cup of Unsalted Cashews
4 T of Sunflower Seed Kernels Unsalted
½ cup of Cran Raisins
3 T of Sherry Vinegar
3 T of Extra Virgin Olive Oil
Salt and Pepper to taste
3 cloves of Garlic (minced)
½ of a Red or Yellow Bell Pepper
½ teaspoon of crushed red pepper flakes

Sautee Fresh arugula, garlic, onion, tomato, yellow bell pepper, cashews, sunflower seeds, and cran raisins with olive oil for 1-2 minutes. Add sherry vinegar salt and pepper, and crushed red pepper flakes for final touch. Enjoy with a slice of grilled fish or chicken for a great dinner. Enjoy!
