Chase Lake Café Turkey Cutlets w/Cilantro Sauce

4 turkey cutlets

1 cup Italian bread crumbs

2 eggs

1 tsp lemon juice

Pinch of salt and pepper

1/2 link Cajun sausage

1/4 yellow onion,diced

2 Tbsp olive oil

1 Tbsp butter

Cilantro Sauce[It is like an Indian style chutney]

1 1/2 cups cilantro

3 Tbsp lemon juice

1 1/2 Tbsp sugar

1/4 tsp salt and pepper

1 Tbsp apple cider vinegar

1 jalapeno pepper

Combine all ingredients in food processer or blender.Pulse until smooth.Take turkey cutlets and dip egg mixture,then bread crumbs.Heat oil and butter in pan and add onion and sausage around edge of pan.Let cook for about 2 minutes before adding turkey cutlets.Cook turkey for about 2 minutes or until golden brown.Turn and cook for last two minutes.Top with sauce and chili sauce on the side.This dish is very good with all kinds of meats,but turkey is great.Serve with squash and rice for a great dinner.We hope you enjoy this recipe;I think you will find it very appetizing!!!
