Chef Bob's Tomato Basil Chicken

2 raw boneless skinless Chicken Breast
1 cup of grape tomatoes (cut in half)
1 Purple onion (sliced)
3 gloves of garlic (minced)
3 tablespoons of olive oil
1 tablespoon of tomato paste
½ cup of water
4 tablespoons of fresh basil leaves (shredded)
Salt and Pepper
2 tablespoons of Malt vinegar

In a large plastic bag place chicken breast and pound thin with meat mallet. Salt and pepper chicken and cook two minutes per side with 1 tablespoon of olive oil. Remove chicken, allow to rest on plate. Add 2 tablespoons of olive oil to pan, then onion, garlic, tomatoes sauté for 1 minute. Then, add tomato paste, ½ cup of water, and malt vinegar sauté 1 minute. Add basil and pour over chicken for the finish.
