Seared Salmon with White Wine and Shallot Reduction Sauce w/ Steamed Broccoli
4x 3oz Salmon Filets
8oz White Wine (whatever flavor you like)
6oz Whole Shallots chopped
2oz Olive Oil (divided)
Salt and Pepper to taste
16oz Broccoli Florets
For Salmon: Heat skillet medium heat with one oz. olive. While skillet heats salt and pepper both sides of salmon filets. Places salmon in skillet skin side down in skillet and sear each side approx. one minute on each side. When seared add the white wine with the salmon. Simmer three minutes. Add chopped shallots and remove the salmon. Turn skillet temp. to high until boil then add other one oz. of olive oil and turn back to medium heat for five minutes for sauce to reduce. Salt and pepper to taste and spread over salmon and broccoli florets.
Broccoli: Bring pot of water to boil. Put broccoli in for 3.5 minutes. Remove and plate.
