Fat Tuesday Bourbon Bread Pudding

  • 6 Cups loaf day-old breads, (crusts cut off and cubed)
  • 1 cup dried cranberries
  • 1 cup pecans
  • 5 eggs
  • 1 cup sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 cup milk
  • 1 cup cream
  • 3 T of Coco powder

Directions

Place cubed bread in bowl, then in a small sauce pot add milk, cream, sugar, and coco powder. Heat to almost boiling to melt sugar. Crack eggs into medium bowl and slowly whisk in hot milk mixture. In a sauce pan, add 1 stick of butter, heat until melted, add cranberry raisins and pecans. Sautee 1-2 minutes, add 1-2 shots of bourbon, careful it will flame up. Pour milk and egg mixture with bourbon mixture over bread cubes, then spoon into a buttered baking dish in the oven 30-40 minutes at 350degrees.
