Angel Hair Pasta with Roasted Garlic

Angel Hair Pasta with Roasted Garlic (Makes 6 servings)
3 whole bulbs garlic
3 tablespoons olive oil
1 cup butter, melted
2 tablespoons chopped fresh parsley
1 teaspoon salt
1/2 teaspoon ground black pepper
1 (16-ounce) box angel hair pasta, cooked

1. Preheat oven to 400°.
2. Cut off pointed ends of garlic; place garlic on a piece of heavy-duty aluminum foil, and drizzle with olive oil. Fold foil to seal. Bake for 1 hour. Let garlic cool for 30 minutes.
3. Squeeze pulp from garlic cloves into a large bowl. Add melted butter, parsley, salt, and pepper, whisking well. Add hot, cooked pasta to butter mixture, tossing to combine.


Chicken with Blackberry-Mustard Cream Sauce (Makes 6 servings)

3 tablespoons olive oil
6 boneless skinless chicken breasts
1 shallot, minced
1 tablespoon minced garlic
1/2 cup whole-grain mustard
1/4 cup blackberry jam
2 cups heavy whipping cream
1 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon ground black pepper

1. In a large skillet, heat olive oil over medium heat. Add chicken breasts; cook for 3 to 4 minutes per side, or until lightly browned. Remove chicken from pan; set aside, reserving drippings in skillet.
2. Add shallot and garlic to skillet; cook for 2 minutes, stirring constantly. Add mustard and blackberry jam, stirring until jam melts. Add cream, salt, garlic powder, and pepper, stirring to combine. Add chicken back to pan. Reduce heat to medium-low; simmer, uncovered, for 20 minutes or until chicken is tender and sauce thickens slightly. Turn chicken in pan periodically for even cooking.

Sautéed Squash  (Makes 6 servings)

3 tablespoons olive oil
1 tablespoon chopped fresh thyme
2 teaspoons minced garlic
3 yellow squash, julienned
3 zucchini squash, julienned
1 bunch green onions, chopped
1 teaspoon salt
1/2 teaspoon ground black pepper

1. Heat olive oil over medium-high heat. Add thyme and garlic; cook for 1 minute, stirring constantly. Add squash; cook for 6 minutes, stirring frequently. Add green onion, salt, and pepper; cook for 1 minute, stirring frequently.
