Do Di Yos Seafood Crepe

2/3 c. flour
1 c. milk
1 tbsp. oil
1 tsp. sugar
1/4 tsp. baking powder
1/4 tsp. salt
1 egg


Beat all ingredients with hand beater until smooth. For each crepe, lightly butter 8 inch skillet and heat over medium heat until bubbly. Pour in scant 1/4 cup batter and rotate skillet until batter covers bottom. Cook until light brown. Turn and cook other side. Stack crepes between waxed paper to prevent drying out. Makes 8.


Crepe filling:
1/4 c. chopped mushrooms
2 tbsp. green onions
2 tbsp. butter
2/3 c. sm. cooked shrimp
1 (6 oz.) pkg. frozen crab meat
1/2 c. Half and Half
2 (3 oz.) pkgs. cream cheese, cubed
1 c. shredded Swiss cheese
2 tbsp. chopped green onion

Cook and stir onions and mushrooms in butter. Stir in seafood, Half and Half, and cream cheese. Cook over medium heat, stirring constantly until cheese melts.
