Chef Bob's Belizean Style fried rice

Inspired by Chef Barry Cuthbertson

2 cups of cooked rice

1 bell pepper (diced)

4 cloves of garlic (minced)

1 cup of broccoli (chopped)

1 purple onion (diced)

1 cinnamon stick

1 cup of orange sections

1 tablespoon Caribbean Jerk

1 cup of pineapple (diced)

½ cup of coconut milk

1 cup of black beans cooked

1 can of rotel tomato

½ cup of corn

4 tablespoons of olive oil

Heat oil add sauté bell pepper, garlic, onion, cinnamon stick, oranges, and pineapple, for 2-3 minutes. Add coconut milk, black beans, rotel tomato, and corn. Cook for 5-10 minutes
