Chef Bob's Alabama Beignets

A.K.A. fried biscuits

3 cups self-rising flour (sifted)

½ cup shortening or butter

¾ cup buttermilk

¼ cup plain flour for dusting

2 cups oil for frying

1 cup powdered sugar for dusting

In a large bowl sift 3 cups self rising flour. Cut in shortening until pea size balls form. Fold in buttermilk until incorporated. Heat oil to 350 degrees. Drop soon fulls of dough into plain flour and pat into patties. Fry dough for 1-2 minutes per side. Remove from oil and drain on paper towels. Dust with powdered sugar.
