Chef Bob's Fruit Zabaglione

1/2 small melon (chopped)

1 banana (peeled and sliced)

1 apple (diced)

1 kiwi (peeled and sliced)

1 clementine or tangerine (peeled)

1 small pineapple (grilled, sliced and chopped)

2 tbsp brown sugar

2 tbsp vanilla

Pinch of salt

1 tbsp of butter

1 lime juiced

3 egg yolks

1/2 cup of marsala

Saute melon, apple, banana, clementing and pineapple in tablespoon of butter. Add brown sugar, salt, vanilla and lime juice for 2 minutes. In a sauce pot half filled with water, fitted with double boiler, place yolks, brown sugar and marsala over simmering water. Whisk constantly until thickened. Arrange fruits on plate and top with zabaglione sauce. Then brown with blow torch and serve.
