Chef Bob's portabella mushroom Panini


2 portabella mushrooms (cleaned and gilled)

1 purple onion sliced

1 tomato sliced

1 red bell pepper (roasted and deseeded)

6-8 basil leaves

¼ cup mozzarella or your choice of cheese (shredded)

Salt and pepper

3 Tablespoons olive oil

2 Tablespoons Lemon juice

Bread for sandwich making

To clean mushroom scrape gills with a spoon and discard gills. Rinse under cold water and pat dry with paper towel. Lightly oil mushroom and sprinkle with salt and pepper. Grill mushroom in a grill pan or Panini press. Meanwhile slice onion and tomato, season with salt and pepper, add to grill or Panini press. Prepare bread with a light coating of olive oil and pesto (optional)

Remove mushroom, onion, and tomato and build on sandwich bread. Add roasted red pepper cheese and basil. Press sandwich in Panini grill for 2-3 minutes.
