All Around Town Catering's Thai Meatballs w/Rice Vermicelli

 

1 lb ground beef

1 yellow onion,diced

1 jalapeno pepper,seeded and diced

1 clove garlic,diced

1 Tbsp bread crumbs

1 Tbsp coriander seeds

1 tsp cumin

2 Tbsp soy sauce

1 Tbsp brown sugar

2 Tbsp lemon juice

2 beaten eggs

Pinch of salt and pepper

2 Tbsp olive oil

Thai chili sauce

Rice vermicelli[Cook how you want it,can be boiled or stir fried]

 

Dice onion,garlic,and pepper.Set aside.Dry fry coriander and cumin and place in mortar,then grind.Place beef in a large bowl.Add onion mixture,then spices,soy,lemon juice,bread crumbs,and eggs.Mix together and shape into golf ball size meatballs.Heat oil in pan.Fry meatballs for about 4 minutes until browned on all sides.Serve over rice vermicelli with Thai sauce.

This good be a great appetizer for the Super Bowl or anytime.It makes a nice light dinner as well!!!Enjoy!!!
