Chef Bob's Turkey Hash

1 purple onion (diced)

1 tablespoon of Olive oil

1 cup of tomato (diced)

3 cloves of garlic (minced)

2 baked potatoes (diced)

1 cup of cooked Turkey (diced)

1 cup of cooked Green Beans (chopped)

1 Bell pepper (diced) optional

1/2 cup pickled okra (diced)

1 tablespoon fresh time

1 cup of Turkey, Chicken, or Vegetable stock

½ cup grated cheese

½ cup of cooked bacon (chopped)

Salt and Pepper to taste

Sautee onions, garlic, tomato, and fresh time with olive oil until transparent. Then add Turkey, potatoes, green beans, okra, S&P, and bacon. Let cook in pan with stock for 3-5 minutes. Top with grated cheese until melted.
