Chef Ron's Famous Island Chicken Kabobs
1/2 cup of soy sauce
1/4 cup of fresh lime juice
1 tablespoon jerk seasoning
1 tablespoon of garlic, minced
1 teaspoon black pepper
6 boneless, skinless chiken breast halves (4 ounces each), cut into thin strips
2 medium yellow squash
2 medium qucchini
1 large green bell pepper
1 large red bell pepper
1/4 cup olive oil
6 large bamboo skewers
Mix jerk seasoning, garlic and black pepper. Set aside. Mix soy sauce and lime juice. Set aside. Cut chicken breast into thin strips(set aside). Cut squash and zucchini and bell pepper into 1-inch chunks (set aside). Thread chicken into zigzag pattern onto bamboo skewers, alternating with vegetables.
Pour soy sauce and lime juice over chicken skewers and sprinkle with dry mixture.
Heat oil in a skillet on medium heat. Place skewers in skillet. Cook on medium heat for approximately 4-5 minutes on each side.
Serve with your favorite sauce.
