Chef Bobs Stuffed Chicken Breast
2 boneless chicken breast pounded thin
¼ roasted bell pepper (sliced)
1 pickled okra sliced
1 slice of provolone cheese
4 strips of bacon (raw)
Lay bacon down on a parchment paper or wax paper or foil, side by side slightly over laping.
Lay thinned chicken breast on bacon. Arrange cheese, pepper and okra on chicken, season with salt and pepper. Roll like a roulade and cook in a med hot skillet seam side down for 2 min. then place in 400 oven for 15 min. allow to rest for 10 min before slicing.
