Kairos Turnip Green Kasserole

3 cups Chopped Turnip Greens (Frozen)
2 cups Black-eyed Peas (cooked)
1 cup Ham (Chopped & Cooked)
2 Cups Chicken Broth
1 small red onion, diced
1 teaspoon minced garlic
1 teaspoon Extra Virgin Olive Oil
Sea Salt (to taste)
Cracked White Pepper (to taste)
Cornbread for the topping (*see recipe at the bottom)
Preheat oven to 375. Spray a 9X12 casserole dish with cooking spray. Preheat Chicken Broth in a large pot and bring to a boil. Add in turnip greens, salt, pepper, and garlic. Bring back to a boil, and strain turnip greens, reserving about two tablespoons of the liquid.
In a large bowl combine Turnip Greens, Black-eyed Peas, Ham, Olive Oil, Onion, Salt, and pepper. With a plastic spatula, fold ingredients together and pour the entire mixture into the casserole dish. Cover with Cornbread Mix, top with aluminum foil and bake for 45 minutes.
Uncover the dish and cook until cheese is golden brown.
1 cups Self Rising Corn Meal
1/4 Cup Self Rising Flour
1/4 Cup Sugar
1/4 Cup Canola Oil
1 teaspoon white pepper
1 teaspoon sea salt
2 cups buttermilk
Mix together with a whisk.
