Benard Tamburello's Chicken Campagna

2 cup panchetta
2 cup chopped onion
1 tablespoon chopped garlic
1 teaspoon fresh thyme
1 cup cherry tomatoes
6 oz chicken, cubed
1 cup veal or chicken stock
1/2 cup flour
1/4 pound unsalted butter
artichoke hearts
1/4 cup marsala wine

Take chicken and lightly sautee in olive oil until brown. Add onion & panchetta. Sweat until translucent. Deglaze the pan with wine. Add thyme, tomatoes, & garlic. Add chicken. Add stock. Make rue with flour & butter in a separate pan. Let stock boil. Fold in rue. Put over your favorite pasta.
