Bowl Game Chicken Tostadas and Tacos with Tomatillo Salsa

1 lb chicken tenders or boneless skinless breasts,sliced or cubed
2 Tbsp rice or olive oil
1 Tbsp fajita seasoning (Or a blend of salt, pepper, chili powder, cumin)
2 Tbsp soy sauce
1/2 lb shredded cheese (Jack, Queso Fresco or Cheddar)
1 cup shredded lettuce
1 cup black beans
1/2 cup diced onions
1/2 cup bell peppers
8 Corn tortillas or tostadas
Tomatillo Salsa [See recipe below]
Prepare salsa and set aside. In a small sauce pan heat black beans. Heat oil in pan and cook chicken similar to stir fry. Add seasoning, onions, peppers and soy sauce. Crisp up chicken with vegetables without over cooking vegetables. Heat tortillas in pan with oil. Layer tostada with lettuce, then beans, chicken, then salsa. You can also make tacos with same mixture. Make it fun and have a Bowl Game Tostada and Taco Bar. If you have fresh avocado, mash it together with some of the salsa and some lime juice to make a quick guacamole. If not, garnish with sliced avocado.

5 medium tomatillos
1 medium tomato
1/2 yellow onion
1/4 cup cilantro
Juice of one lemon
Pinch of salt,pepper,and sugar
Splash of vinegar
Combine all ingredients in blender. Blend until coarsely chopped, about 30 seconds.
