Chef Bob's Southern Quinoa
4C Vegetable Stock
1 Onion, diced
2 Cloves Garlic, diced
1/2C Tomatoes, diced
1/2C Pickled Okra, diced
2T Parsley or Cilantro, chopped
3T Olive Oil
Saute onion, garlic, tomatoes, and okra in olive oil for 2-3 minuts. Add to cooked quinoa.
Bring 4 cups vegetable stock to a boil Add 1 teaspoon salt. Add 2 cups quinoa to stock. Bring back to a boil and simmer 12-15 minutes.
