Grilled Salmon, sticky rice, stir fry veg w/ sweet-soy reduction

 

4oz. Salmon Fillet

1oz. Green Beans

1oz. Carrot (Julliene)

1oz. Shiitake mushroom

1oz. Grape Tomatoes (Halved)

4oz. Sushi Rice

1oz. Sake

3oz. Sweet-Soy Reduction

Salt & Pepper

Toasted Sesame Seeds

 

Coat  salmon filet with a little canola oil, salt, and pepper.  Grill on hot.  Cook salmon 4 minutes per side.  Heat oil in sauté pan until oil starts to simmer.  Add beans, carrots, and mushrooms.  Brown 45 seconds.  Add sake and allow to steam 2 minutes.  Add tomatoes and half soy reduction. Toss to coat.  To plate, start with rice as base.  Add  veg.  Top with salmon.   Finish with remainder soy reduction and white sesame seeds.
