Christmas apple soup

Chef Bob's Christmas Apple Soup


1 Tablespoon olive oil

1 cup celery (diced)

1 purple onion (diced)

2 teaspoons fresh ginger

½ cup dried cranberries

2 Granny Smith apples (diced)

1 Tablespoon fresh ginger (minced) or micro planned

1 sprig rosemary

2 teaspoons allspice

Salt and pepper

2 cups rice milk

Sautee celery, onion, cranberries, ginger and apples in 1 Tablespoon of olive oil for 2-3 min. add rosemary sprig all spice, salt and pepper. Add rice milk and bring to a boil. Blend in blender or us an emulsion blender.
