Sweet Bones Alabama Grilled Caesar Salad with Cajun Shrimp

Shrimp

  • 1 lb 40-50 ct shrimp peeled and deveined
  • 1 T Cajun seasoning
  • 1 t minced garlic
  • 2 oz salad oil

Mix seasoning, garlic, and oil. Toss shrimp in mixture until evenly coated. Skewer on wooden skewers that have been soaked in water

Salad

  • 2 hearts of Romaine lettuce, washed well and cut in ½ lengthwise
  • ½ cup good Parmesan cheese
  • 1 cup Caesar dressing
  • ½ cup croutons
  • Extra Virgin olive oil
  • Sweet Bones Meat Rub (available at most Piggly Wigglys and Western Supermarkets

(or your favorite seasoning)

Procedure

  • Prepare hot grill, preferably charcoal or wood fired. Place shrimp skewers over coals and cook until done, about 3-4 minutes on each side
  • Brush both sides of Romaine with olive oil and season liberally with Meat Rub
  • Place over hot coals and cook 45-60 seconds
  • Turn and repeat for another 45-60 seconds
  • Place Romaine on serving plate and paint with dressing
  • Top each half with 2 T Parmesan Cheese,  croutons, and ¼ lb of shrimp
  • Enjoy

Serves 4 as entrée serving
