Chase Lake Café Fresh Tortellini with Pesto
One package fresh tortellini
1/2 cup fresh pesto
1/2 cup fresh sundried tomato pesto
1/2 cup olive oil
1 cup basil
2 cloves garlic
1/4 cup pine nuts
1/2 tsp salt
Combine all ingredients in food processor or blender.Pulse to blend;then puree quickly to get a nice consistency.Add sundried tomatoes to make the sundried tomato pesto.
Bring water to a rolling boil.Cook tortellini for about 3 1/2 minutes.Strain and run cool water over them to stop cooking process.Heat 1 tbsp olive oil in a skillet.Fry tortellini for about 1 minute to firm them up.Toss with pesto of your choice.Makes a great holiday appetizer or meal.Enjoy!!!
Chill tortellini and place on skewer.Have pesto for dipping sauces.These are great anytime of the year,but very colorful for the holidays.Talk about simplicity for entertaining.You could even have an alfredo sauce for your third sauce.
