Ingredients Prep measure 2x batch Preparation notes
green onions  1/8" sliced 1/2 cup  1 1/4 cup  
celery minced 1/2 cup  1 1/4 cup Wing prep includes rinsing,
 sugar    1/4 cup 2/3 cup  slitting, and stretching wings to 
 raw shrimp 70-90 ct minced 5/8 cup 1 1/2 cup prepare for piping
white onions  minced 1 qt 1/2 gallon Please do this step first and 
 fresh cilantro, stemmed  minced 1/2 cup 1 1/4 cup return to cooler while preparing
 mushrooms 1/4" diced 1/4 lb 10 oz stuffing
ground pork    2 lb 5 lb  
Salt    2 T 1/3 c  
ground black pepper    2 T 1/3 c mis en place
Fish sauce    2 T 1/3 c 24" mixing bowl
 large chicken wings  wash/prep 35-40   measuring spoons
Cajun seasoning       1 cup measure
 all-purpose flour    3 cups   8 cup measure
        Food Processor
        Cooks Spoon
Yield   approx 35 pcs approx 75 pcs Chef's Knife
        Pastry bag
Procedure tip 
1.) Prep celery, green onions, and cilantro with chef's knife Full Sheet pans
2.) Prep white onions and mushrooms in food processor  
3.) Combine first 11 ingredients in mixing bowl and mix well with cook spoon  
4.) Fill Pastry bag 2/3 full with mixture  
5.) Pipe mixture into each wing as full as reasonably possible  
6. Place in smoker and cook at 250o for 1 1/2 hours??  
7.) Place on cooling rack in walk-in, Label, date, refrigerate
