Chef Bob's Cherry Apple Chicken

1 small purple onion (diced)

2 cloves garlic (minced)

½ teaspoon crushed red pepper flakes

1 granny smith apple (diced)

½ cup cherries

1 Tablespoon fresh thyme leaves

2 Tablespoons olive oil

2 cups cooked chicken (diced)

1 Tablespoon lemon juice

½ teaspoon allspice

Salt & Pepper

1 Tablespoon chopped parsley (optional)

Sauté onion, garlic, red pepper flakes, apples, cherries, and thyme in olive oil for 2-3 minutes. Add cooked chicken, lemon juice, allspice, salt and pepper and cook until properly heated. Add chopped parsley if desired.
