Nabeel's Fresh Grouper Sandwich with Caper Mayonnaise
6-8 oz. Grouper
Extra Virgin Olive Oil
Salt and pepper
4-5 slices red onions
5 Cherry tomatoes halved
Sugar water mixture (3 parts sugar and one part water)
2 Slices of Foccacia or other kind of bread
Heat the skillet medium heat. Drizzle the oil and let be hot.
Season the grouper on both sides with salt, pepper and oregano.
When the skillet and oil is hot place the grouper in the skillet
about 3-4 minutes on each side.
Place red onion in the skillet with the fish and drizzle the
sugar water mixture until the onions are caramelized.
Place the cherry tomatoes in the skillet.
Remove fish when brown on both sides.
Caper Mayonnaise ingredients:
3-4 oz. capers capotes
4 cloves of garlic
½ a lemon
Pinch of salt
¼ cup of extra virgin olive oil
In food processor place garlic, capers, egg and squeeze lemon.
Let it run for about a minute, then drizzle slowly the olive oil for about a minute or two. If you want the sauce to be creamier run it for about 4-5 minutes.
Plate the Foccacia bread, spread a generous amount of the Mayonnaise sauce, place lettuce over the sauce, then the fish over the lettuce. Add more sauce on top of the fish, place the cherry tomatoes and red onions on the plate.
