Turkey Mole Poblano and Adobo Sweet Potatoes

3 Tbsp olive oil

1 yellow onion,chopped

2 cloves garlic

1-2 chipotle peppers

1 Tbsp sesame seeds[Some extra for garnsih]

1/4 tsp ground cinnamon,cloves,and coriander

2 Tbsp chopped almonds

3 tomatoes,peeled and chopped

2 Tbsp raisins

1 1/2 cups chicken stock

1 Tbsp peanut butter

1 oz semi sweet chocolate,grated

24 oz cooked turkey meat,chopped

2 Tbsp cilantro

2 large sweet potatoes,peeled and cubed

2 Tbsp butter

1/2 tsp salt

1 Tbsp adobo sauce

3 cloves roasted garlic,minced

Heat love oil over medium heat,add onion,garlic,and chilies until tender.

Add sesame seeds,almonds,and spices until well blended.Add tomatoes,raisins,stock,peanut butter,and chocolate.

Blend all ingredients to blender and blend until smooth.Return to pan and add turkey.Simmer for 45 minutes.

Steam sweet potatoes until tender.Combine potatoes,butter,adobo,garlic.Mash to desired consistency.It may sound complicated but it is worth the effort!!!
