Sweet Potato Pecan Pie

1 9-inch graham cracker or cake crumb pie shell

1lb sweet potatoes

¼ c. margarine

1 14-oz. can condensed milk

1 tsp vanilla extract

1 tsp cinnamon

1 tsp. nutmeg

½ tsp. salt

1 egg


1 egg

¼ c. dark corn syrup

½ c. light brown sugar

1 T. Melted Butter

1 T. Bourbon

1 C. chopped pecans

Cook sweet potatoes until tender. Peel and place hot potatoes in mixer. Add margarine and mix until smooth. Add sweetened condensed milk, vanilla, spices and eggs to mixer. Pour into prepared pie shells, bake 20 minutes in 350°F oven until set slightly. Mix pecan topping ingredients and pour over partially cooked pie. Continue baking until set, about 20 more minutes.  Store in refrigerator.  Makes one pie.
