Fit2Eat Sweet Potato Casserole (vegan)

4-5 sweet potatoes (baked)

1 small eggplant (peeled, sliced, salted)

1 c. tomato, diced

3 cloevs garlic, minced

6 c. spinach

1 small onion (sliced)

1 c. cranberries

2 tsp fresh rosemary or thyme (chopped)

4 tbsp olive oil

1 c. granola

salt & pepper

Peel & mash sweet potatoes.  Spray casserole with vegetable spray.  Spread mashed sweet potatoes in casserole dish.  Sautee eggplant, tomato, garlic, onion, cranberries & spinach in olive oil for 2-3 minutes.  Add salt and pepper.  Add rosemary, spread on top of sweet potatoes.  Top with granola.  cover & bake 30 min at 350 degrees
