Dill mash potatoes with seared salmon

Seared Salmon with dill mashed potatoes

6oz fresh salmon
salt and pepper to taste
10 b red potatoes cut and cubed
4 sprigs of fresh dill
1 lemon
1/2 cup white wine
1/2 cup fish or seafood stock
1 stick of butter
1/2 cup of milk
1/4 cup olive oil

boil your potatoes in water, once soft drain water add butter milk and dill leaves with salt and pepper to taste
in a saute pan heat to med heat add dust salmon with salt and pepper put in skillet till it turns golden brown. flip and sear the other side salmon cooks fairly quick watch your temp of heat. degalze with your lemon first and them your wine once reduced by half add your stock reduce and fold in your butter and reduce till thick but saucy. plate up and enjoy.
