Pan seared salmon

2-salmon filets

3 tbsp olive oil

1 small onion (sliced)

2 c. whole grape tomatoes (or diced tomatoes)

3 cloves garlic

1/4 tsp red chili flakes

3 c. spinach

1/4 c. lemon juice

Dry salmon with paper towels.  Lightly oil & season w/ salt & pepper.  In a hot skillet (nonstick), sear salmon for 2-3 minutes.  Then turn over for 2-3 min.  In a separate pan, saute onion, garlic & chili flakes in 3 tbsp olive oil.  Add tomatoes & spinach.  Add lemon juice when spinach is wilted.
