Sausage Stuffed Mini Sweet Peppers
Take a package of Johnsonville Hot Italian Sausage, a container of multi-colored mini sweet peppers and a package of mozzarella pearls.  Remove the casing from the sausage and pinch off enough to make a small meat ball.  Use your finger to make a small impression and put one mozzarella pearl inside and close the sausage completely around and fill a half seeded pepper. Place it on a hot grill meat side down for a couple of minutes until well seared and turn.  Let the pepper char slightly for about 4 minutes until the cheese begins to ooze from the meat.  Let it cool slightly and enjoy.

Shrimp Salad on Bibb lettuce

1lb cooked shrimp
1/3 cup Hellman's Mayo with Olive Oil
1/4 cup Finely Chopped Celery
1/4 cup Fresh Grated Parmesan Cheese
1Tbsp Fresh Chopped Dill
Sea Salt and Fresh Ground Pepper to taste

Mix thoroughly and spoon on a small leaf of baby Bibb lettuce
