Florentine Frittata with Feta

Chef Bob's Florentine Frittata

5 eggs

5 c. spinach

1 tomato, seeded & diced

1/2 onion, (sliced)

10 basil leaves, shredded

3 tbsp olive oil

salt & pepper

1/2 c. feta cheese

Saute onion & tomato in olive oil.  Add basil.  Add spinach & cook until wilted.  Salt & pepper.  Blend 5 eggs in blender for 1 min. Add to skillet.  Add feta cheese.  Cook until eggs are set.  Serves 6.
