Chef Bob's Sweet Potato Saute`
 
2 medium sweet potatoes (peeled and sliced)
1 Granny Smith Apple (sliced peel on)
1/2 purple onion (sliced)
1 bell pepper (sliced)
1 Tomato (seeded and sliced)
4 cups fresh spinach leaves (packed)
1 cup fresh basil leaves (loose packed)
3 Tablespoons olive oil
salt & pepper
 
Begin by sauteing sweet potatoes, apple and onion in olive oil
add bell pepper, tomato, spinach, and basil. Salt & pepper to taste, cook until spinach and basil are wilted, serve
